Chocolate Chip Cookies - Sweet & Natural

1 cup whole wheat pastry flour

1 cup unbleached white flour

1 cup malt-sweetened chocolate chips

1/2 cup walnuts, toasted & chopped -- optional

1 teaspoon aluminum-free baking powder

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup light vegetable oil

1/4 cup brown rice syrup

1/4 cup pure maple syrup

1/2 cup water

1 teaspoon vanilla

 

1. Preheat the oven to 350 degrees F. Line two baking sheets with

parchment or lightly brush with oil.

 

2. In a large bowl, mix dry ingredients. In a medium bowl, whisk wet

ingredients and stir into dry.

 

3. For medium-small cookies, transfer heaping teaspoons of dough

(from flatware, not measuring spoon) onto baking sheet. For big

cookies, use a 1/3-cup ice cream scoop. Leave an inch or two of space

between cookies.

 

4. Bake for 12 to 15 minutes for small cookies, 15 to 20 minutes for

large cookies.

 

 

Makes 2 to 3 dozen small or 9 large cookies

 

Variation: Orange-Pecan Double Chocolate Chip Cookies - Substitute

1/2 cup cocoa powder for that amount of flour. Substitute pecans for

walnuts. Include the zest of half an orange, chopped, and orange

juice in place of water.
