Potato Lasagna

Savory " Sausage " Filling

olive oil spray

3 cloves garlic -- minced

1/3 cup sliced scallions

1/3 cup chopped green bell pepper

2 small red-skinned potatoes (1 cup small dice) -- diced

1 14 oz package Gimme Lean, sausage style

1/3 cup dry vermouth

3/4 teaspoon dried thyme

Tofu Layer

1 26 gram package Tofu Hero Garden Scrambler

1/3 cup boiling water

3 12.3 oz packages lite silken tofu

3 cloves garlic -- minced

1/3 cup sliced scallions

1/3 cup chopped green bell pepper

1 teaspoon lemon pepper

3/4 teaspoon dried marjoram

1 teaspoon onion powder

1/4 cup soy Parmesan cheese

Sauce

1/4 teaspoon crushed red pepper

1 25 oz jar tomato sauce

1 14 1/2 oz can Mexican-style stewed tomatoes

1 6 oz can tomato paste

3/4 cup dry vermouth

1 16 oz package Barilla lasagna noodles

 

For the filling: Spray a 10-inch frying pan with oil. Warm pan over

medium-high heat. Add the garlic, scallions, and bell pepper. Saute 3 minutes

and add diced potatoes. Saute mixture 5 minutes. Spray with additional oil and

add the vegetarian sausage. Cook mixture 8 to 10 minutes, stirring frequently

to break up sausage pieces. Add the vermouth and thyme, reduce heat to low, and

simmer 5 minutes. Set aside.

 

For the tofu layer: Combine the Tofu Hero mix with the boiling water and set

aside.

 

Place silken tofu in a large bowl and mash with a potato masher. Add the

garlic, scallions, and bell pepper. Add the lemon pepper, marjoram, onion

powder, and soy Parmesan. Add the Tofu Hero mixture and mix thoroughly. Set

aside.

 

For the sauce: Spray a 5-quart saucepan with oil, add the crushed pepper and

warm for 1 minute over medium-high heat. Add the tomato sauce and stewed

tomatoes. Spoon the tomato paste into the pan, add the vermouth, and stir to

blend the tomato paste into the sauce.

 

To Assemble: Preheaat oven to 350F. Spread a layer of tomato sauce evenly

along the bottom of a 9 x 13-inch baking pan. Top with a layer of noodles. Add

broken noodle pieces around edges to make an even fit. Top with the tofu

filling, followed with a layer of noodles, followed by a layer of noodles, and

cover with sauce. Add a layer of savory sausage filling mixture and top with a

layer of noodles. Cover noodles with remaining sauce and sprinkle with soy

Parmesan cheese. Cover casserole with foil and bake for 45 minutes. Remove

foil and bake an additional 15 minutes. Let lasagna sit for 15 minutes before

serving. Reheats very well.

" Potatoes may seem an unlikely addition to lasgna. In this dish, just

1 cup of diced potatoes in the savory " sausage " filling adds balance,

and the flavor and texture of the tofu layer are dramatically enhanced

by the addition of Tofu Hero Garden Scrambler "
