Guest guest Posted December 13, 2000 Report Share Posted December 13, 2000 * Exported from MasterCook * Penne Vodka Recipe By :More Soy Cooking - Marie Oser Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 teaspoons olive oil 1/8 teaspoon crushed red pepper 2 teaspoons grated fresh gingerroot 4 garlic cloves -- minced 1 medium yellow onion -- chopped 1 6 oz package veggie Canadian bacon 1 14 1/2 oz can Italian-style stewed tomatoes 1 12.3 oz package lite silken tofu 1 1/4 cups chicken-flavor vegetarian broth 1/2 cup vodka 1 tablespoon cornstarch 2/3 cup nutritional yeast 1/3 cup grated soy Parmesan cheese 1 31.3 gram package Tofu Hero Shanghai Stir Fry 1/3 cup boiling water 2 tablespoons chopped fresh cilantro 1 16 oz package penne pasta Warm oil, crushed pepper, and grated gingerroot in a 5-quart saucepan over medium-high heat foor 2 minutes. Add the garlic, onion, and diced veggie bacon and saute 5 minutes. Snip stewed tomatoes into smaller pieces and add to the pan. Reduce heat to low and simmer mixture, stirring occasionally Place the tofu in food processor and blend. Add broth, vodka, cornstarch, yeast, and soy Parmesan and process. Stir Tofu Hero into boiling water and set aside a minute before adding to the food processor; blend. Add the tofu mixture to the pan with cilantro and stir to blend. Simmer gently, stirring occasionally, until ready to serve. Cook pasta according to package directions and toss with 1 1/2 cups " cream " sauce. Serve with additional sauce.
