Guest guest Posted December 13, 2000 Report Share Posted December 13, 2000 All the recipes in this cookbook are vegan. * Exported from MasterCook * Pasta e Fagiole Recipe By :More Soy Cooking - Marie Oser Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons olive oil 1/4 teaspoon crushed red pepper 1 1/2 teaspoons dried minced garlic 1/2 cup chopped red onion 1 6 oz package veggie Canadian bacon 1/2 cup dry vermouth 1 25 oz jar fat-free tomato sauce 1 6 oz can tomato paste 3/4 cup water 1 15 oz can Great northern beans 1/4 cup nutritional yeast 1 bay leaf 1/3 cup chopped fresh basil 1 teaspoon dried thyme 1 1/2 teaspoons dried oregano 1 16 oz package elbow macaroni Warm oil, crushed pepper, and dried garlic in a 5-quart saucepan over medium-high heat for 2 minutes. Add the chopped onion and veggie bacon and saute 3 minutes. Add the vermouth and cook mixture, stirring occasionally, 3 minutes. Add the tomato sauce, spoon the tomato paste into the sauce, fill the tomato-paste can with water, and add to the sauce. Stir to blend. Reduce heat to low and add remaining ingredients, except for pasta. Simmer gently, stirring occasionally, for 10 minutes, or untiil ready to serve. Cook pasta according to package directions and too with 2 cups of sauce. Serve with additional sauce.
