Mushrooms with Cumin and Lemon

 

Recipe By :BBC Good Food 2000-11

1 1/2 pounds chestnut cup mushrooms -- or more

3 tablespoons olive oil

1 teaspoon cumin seed

2 cloves garlic -- chopped

1/2 teaspoon red pepper flakes (hot)

3 tablespoons lemon juice

salt and pepper

200 milliliters coconut cream

1/4 cup chopped cilantro (coriander leaves) -- or more

3 large naan bread -- warmed to serve

 

Quarter mushrooms if large. Heat oil in a large pan, add cumin, garlic and Chile

flakes and fry gently until lightly toasted. Add mushrooms and fry quickly until

softened, after 5 minutes.

 

Stir in lemon juice, salt and pepper then reduce the heat and stir in the

coconut cream. Remove from the heat and leave to cool

 

A few minutes before serving, reheat gently, stirring until warmed through.

Spoon into individual dishes and sprinkle with coriander. Serve with pieces of

warm naan

 

To heat the naan: sprinkle with a little cold water and grill on both sides

until hot. Alternatively, wrap in foil and heat through in a moderate oven for

10 minutes.

NOTES : CHESTNUT MUSHROOM - (Agaricus brunnescens) - cultivated: These are

similar to the cultivated white mushrooms, but the strain is slightly different,

producing a mushroom with a brown outer skin, a firm texture and a stronger,

more nutty flavor. Chestnut mushrooms have a higher percentage of dry matter

so they are excellent in pates, breads and pastries. These mushrooms are picked

and sold at two stages of their growth -- closed caps which are round with

closed veils, and flats which are larger with the dark brown gills clearly

visible. Might be called " Button " or " Brown " mushrooms.
