Creamy Black Beans with Rice

1 1/2 teaspoons olive oil

1/4 teaspoon crushed red pepper

1/2 cup sliced scallions

2 large garlic cloves -- minced

1 15 oz can black beans (do not drain)

1 large fresh tomato -- chopped

1 tablespoon Bragg Liquid Aminos

1/4 cup chopped fresh cilantro

1 teaspoon Mexican oregano

1/2 teaspoon groun cumin

1/3 cup nutritional yeast

3 cups cooked brown rice

 

In a medium saucepan, warm oil and crushed pepper over medum-high heat for 1

minute. Add scallions and garlic and saute 3 minutes. Add beans, tomato, and

liquid aminos; reduce heat to low and simmer 5 minutes. Add cilantro, oregano,

cumin, and yeast. Simmer 5 minutes, or until ready to serve, stirring

occasionally. Spoon over brown rice.
