Guest guest Posted December 12, 2000 Report Share Posted December 12, 2000 * Exported from MasterCook * Swiss " Steak " with Sauteed Portobello and Cremini Mushrooms Recipe By :More Soy Cooking - Marie Oser Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 14 oz packages Gimme Lean, ground beef style 1/4 cup whole wheat bread crumbs 1/2 teaspoon granulated garlic 1/3 cup fruit-sweetened ketchup 2 tablespoons Dijon mustard 3 tablespoons olive oil -- divided 3 large garlic cloves -- minced 3/4 cup Vidalia, Maui, or other sweet onion -- chopped plus 1/4 cup Vidalia, Maui, or other sweet onion -- chopped 1 stalk celery -- chopped 3 ounces veggie Canadian bacon -- diiced 3/4 cup dry vermouth plus 1/4 cup dry vermouth 1 14 1/2 oz can Italian-style diced tomatoes 1/2 cup minced shallots (about 2 to 3 large) 1 6 oz package baby portobello mushrooms -- sliced 2 6 oz packages cremini mushrooms -- sliced 1/4 cup balsamic vinegar 1 1/2 tablespoons tamari soy sauce 1/2 cup beef-flavor vegetarian broth 3 tablespoons arrowroot 2 tablespoons cold water 1/2 teaspoon dried thyme 1 teaspoon dried basil In a large bowl, combine the vegetarian ground beef with the bread crumbs, garlic, ketchup, and mustard. Form mixture into 8 patties. In large electric frying pan or Dutch oven, brown patties in 1 tablespoon of the oil. Remove from pan and set aside. Add 1 tablespoon oil to pan and saute the garlic with 3/4 cup of the onion, celery, bell pepper, and veggie bacon for 5 minutes. Add browned patties and continue to saute 5 minutes longer. Lower heat to simmer and add 3/4 cup vermouth anf the tomatoes. Heat remaining tablespoon of oil in a 10-inch frying pan, saute shallots 2 minutes, and add reserved 1/4 cup of onions and the mushrooms. Cook 3 minutes, or until mushrooms are softened. Add the vinegar, tamari, and broth and lower heat to simmer. Dissolve arrowroot in water and stir into mushrooms allong with the thyme and basil. Simmer 5 minutes, stirring occasionally. Pour over burgers with remaining 1/4 cup vermouth. Simmer until ready to serve. Description: " Sometimes called Salisbury steak, this hearty entree presents beautifully.
