Guest guest Posted December 12, 2000 Report Share Posted December 12, 2000 We had over a foot of snow yesterday, time for something warming- * Exported from MasterCook * Chile Non Carne Recipe By :More Soy Cooking - Marie Oser Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup sliced onion 6 cloves garlic -- peeled 1/2 bell pepper -- sliced 1 medium zucchini -- sliced 2 cups sliced carrots 6 ounces portobello mushrooms -- diced 1 1/2 teaspoons olive oil 1/4 teaspoon crushed red pepper 2 12 oz packages ground beef alternative 1 15 1/2 oz can chili beans with chipotle peppers 1 14 1/2 oz can diced tomatoes and jalapenos 1 14 1/2 oz can Mexican-style stewed tomatoes 1 tablespoon chili powder 1 teaspoon dried thyme 2 teaspoons Mexican oregano 2 teaspoons ground cumin 1/2 cup snipped fresh cilantro cayenne, to taste Place the onion, garlic, and bell pepper in the bowl of a food processor and pulse to chop. Set aside. Place the zucchini, carrots, and mushrooms in the food processor and pulse to chop. In a 5-quart saucepan, heat oil and crushed pepper for 1 minute over medium-high heat. Add the chopped veggies and saute 5 to 8 minutes, stirring frequently. Add the vegetarian beef, chili beans, and tomatoes. Lower heat to simmer, add remaining ingredients, and cook mixture 20 minutes, or until ready to serve.
