Chile Non Carne

1 cup sliced onion

6 cloves garlic -- peeled

1/2 bell pepper -- sliced

1 medium zucchini -- sliced

2 cups sliced carrots

6 ounces portobello mushrooms -- diced

1 1/2 teaspoons olive oil

1/4 teaspoon crushed red pepper

2 12 oz packages ground beef alternative

1 15 1/2 oz can chili beans with chipotle peppers

1 14 1/2 oz can diced tomatoes and jalapenos

1 14 1/2 oz can Mexican-style stewed tomatoes

1 tablespoon chili powder

1 teaspoon dried thyme

2 teaspoons Mexican oregano

2 teaspoons ground cumin

1/2 cup snipped fresh cilantro

cayenne, to taste

 

Place the onion, garlic, and bell pepper in the bowl of a food processor and

pulse to chop. Set aside.

 

Place the zucchini, carrots, and mushrooms in the food processor and pulse to

chop.

 

In a 5-quart saucepan, heat oil and crushed pepper for 1 minute over medium-high

heat. Add the chopped veggies and saute 5 to 8 minutes, stirring frequently.

Add the vegetarian beef, chili beans, and tomatoes. Lower heat to simmer, add

remaining ingredients, and cook mixture 20 minutes, or until ready to serve.

coarsely chopped portobello mushrooms and vegetables as well as the

soy-based vegetarian burger. "
