By the way, I am apologizing in advance for not putting this into MC format. Danell Pisto This is an adaptation of a classic Spanish vegetable dish (similar to the Italian ratatouille). Serves 4-6 3 tablespoons Olive oil 1 large Onion, diced 2 cloves Garlic, minced 1 Potato, diced 1 Zucchini, diced 1 Green bell pepper, diced 1 Red bell pepper, diced 2 medium Tomatoes, diced Heat the oil in a heavy skillet (with a lid). Add the other ingredients (except the tomato) and cook until the onion is just soft. Reduce the heat, cover, and simmer 20 minutes. In a separate pan cook the tomato until almost dry.
