Glazed Acorn Squash With Orange And Ginger

4 acorn squash -- halved and seeded

Salt and pepper

1/2 cup orange juice

1/2 cup sugar-free orange marmalade

2 teaspoons grated fresh ginger

Orange juice, orange marmalade, and fresh ginger make a delicious glaze for

baked acorn squash halves. The mixture seeps into the flesh as it bakes,

enhancing the squash's delicate sweet flavor.

 

Preheat oven to 425 degrees F. Season acorn halves with salt and

pepper. Cut a slice off the rounded side of each half so that they can sit

in a baking dish without wobbling. Place halves in a large baking dish or

two smaller dishes. Whisk together orange juice, marmalade, and

ginger. Put one quarter of the mixture in each acorn half and spread it

evenly around the cavity and on the squash rims. Cover dish tightly with

aluminum foil or a lid and bake 30 minutes. Uncover, baste squash rims

with any accumulated juices, and bake, uncovered, until squash is lightly

glazed, about 10 minutes.

 

TIP: Instead of orange juice and marmalade, try apple juice with apple

jelly or a mixture of honey and lemon. The fresh ginger is a lovely touch,

hut ground ginger
