Braised Brussels Sprouts And Chestnuts

2 pounds fresh Brussels sprouts

1 cup Vegetable Broth

(see separate recipe or store-bought)

1/2 teaspoon dried thyme

1 pound peeled chestnuts

vacuum-packed without liquid

Salt and pepper

It may surprise you to know that chestnuts-unlike other nuts-contain

virtually no fat and fit into the Reversal Diet guidelines. So you can

enjoy them in this classic holiday dish, where they add a sweet

counterpoint to Brussels sprouts. Fresh chestnuts harvested in autumn,

aren't widely available and are time-consuming to peel. For convenience,

look for peeled and vacuum-packed chestnuts with no added liquid. They are

an excellent, albeit expensive, product. If you can't find them or prefer

not to buy them, you can braise the Brussels sprouts without them; the

sprouts are perfectly delicious on their own.

 

Wash the Brussels sprouts and remove any blemished outer leaves. Halve

each sprout through the stem end.

 

In a large skillet, combine the halved sprouts with the broth and

thyme. Bring to a boil over high heat, then cover and reduce the heat to

maintain a simmer. Simmer until the sprouts are tender when pierced, 15 to

17 minutes. Add the chestnuts and stir gently until heated through, 2 to 3

minutes. Season with salt and pepper to taste.

 

TIP: Small Brussels sprouts tend to be milder and sweeter than large

ones. When young and small, they can truly have a delicate flavor, with

none of the strong, cabbage- like taste that many people associate with

Brussels sprouts. Look for sprouts that are small and firm, with no

yellowing leaves.
