Guest guest Posted December 11, 2000 Report Share Posted December 11, 2000 * Exported from MasterCook * Banana Bran Muffins Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : ediets Low Fat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups cake and pastry flour 1/2 cup rolled oats 1/2 cup natural bran 1/3 cup lightly packed brown sugar 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 egg whites 1 cup mashed bananas -- (about 2 large) 1/2 cup skim milk 1/3 cup corn syrup 2 tablespoons molasses 1 cup raisins In large bowl, combine flour, oats, bran, brown sugar, baking powder, baking soda and salt. In small bowl beat remaining ingredients together thoroughly. Stir into flour mixture; mixing just until moistened. Spoon into muffin pan. Bake at 375 farenheit 20-25 minutes. Cool about 3 minutes, remove from muffin tin.
