Greek Feta Burgers (Miriam's rendition)

The actual recipe in the book calls for lamb. I think you could substitute any

veggie burger ingredients, and this would be delicious. I haven't actually

tried to make this yet, so I am only presuming at this point, because I love

anything that resembles a Greek salad. I just also realized, that black olives

would be great in or on these. I'll send the cucumber dill sauce separately.

Miriam's Variation on Greek Feta Burgers

Amount Measure Ingredient -- Preparation Method

1 10 oz. pkg. frozen spinach -- thawed and drained

1 tablespoon lemon juice

1/4 teaspoon black pepper

1 large egg -- lightly beaten

equivalent of 3/4 lb. burger crumbles,

TVP, GimmeLean or other burger

possibilities.

1/2 cup crumbled feta cheese

1/4 cup chopped fresh mint or 4 tsp. dried mint

cooking spray

hamburger buns (with onions, if desired)

1 cup fresh spinach leaves

1/2 cup diced tomato

cucumber dill sauce

 

Squeeze as much water as possible out of frozen spinach. Combine first 4

ingredients. Add burger material of choice, cheese and mint, and stir well.

Divide mixture into 4 equal portions, shaping each into a 1/2 inch thick patty.

Grill on BBQ or in broiler, turning once until done, about 5 minutes per side.

 

Line bottom half of buns with spinach leaves, top each with a patty. 2

tablespoons tomato, 2 tablespoons cucumber dill sauce and tops of buns.
