Sorry I'm late for CHANUKAH week with this, but I just got this great book out

of the library on Friday, and just had a chance to sit down with it last night.

Loukoumades (Greek Anise Fritters)

3 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1 cup water

1/4 cup ouzo or raki (anise liqueur)

1 large egg -- lightly beaten

2 tablespoons sugar

1 tablespoon olive or vegetable oil

1/2 teaspoon vanilla extract

vegetable oil for deep frying

confectioner's sugar for dusting or

warm sugar syrup for dipping

 

Sift together the flour, baking soda and salt. Combine the water, ouzo, egg,

sugar, oil and vanilla. Stir into the flour mixture to make a loose batter.

Cover and let stand at room temperature for 30 minutes.

 

Heat at least 1 inch of oil over medium heat to 375 degrees.

 

Dip a tablespoon into cold water and use the spoon to drop the batter into the

hot oil. (Moisten your fingers to prevent sticking when pushing the batter off

the spoon.) In batches, fry the fritters, turning occasionally, until golden

brown on all sides, about 3 minutes. Remove with a wire mesh skimmer or tongs

and drain on a wire rack. Sprinkle with confectioner's sugar or dip the cooled

fritters into warm sugar syrup.
