Stuffed Mushrooms Florentine

olive oil spray

36 large stuffing mushrooms

1 1/2 teaspoons olive oil

1 tablespoon minced dried garlic

1/3 cup sliced scallions

1/3 cuo chopped red bell pepper

1 14 oz package Gimme Lean, sausage style

1 10 oz package frozen spinach -- thawed

1 teaspoon lemon pepper

1 teaspoon dried thyme

1/2 teaspoon onion powder

2 tablespoons nutritional yeast

1/3 cup dry sherry

 

Preheat oven to 375F. Spray baking pan with oil.

 

Wipe mushrooms with a damp paper towel and remove stems, leaving caps intact.

Chop stems and set aside. Place mushrooms on baking pan cavity side up, and set

aside.

 

In a 4-quart saucepan, heat oil and minced garlic over medium-high heat for 1

minute. Add scallions and bell pepper and saute mixture 3 minutes. Add veggie

sausage, stirring and breaking apart with a fork. Cook 5 minutes or until

" sausage " is brown. Add chopped stems and spinach and cook mixture 3 minutes.

Add remaining ingredients and cook over medium-low heat 10 minutes, stirring

frequently. Spoon filling into mushroom caps and bake for 20 to 25 minutes.

Serve hot.
