Guest guest Posted December 11, 2000 Report Share Posted December 11, 2000 * Exported from MasterCook * Pasta Salad Primavera Recipe By :More Soy Cooking - Marie Oser Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 12.3 oz package lite silken tofu 3 cloves garlic -- peeled 1/3 cup eggless mayonnaise 3/4 cup enriched 1% fat soymilk 1 tablespoon balsamic vinegar 1 20.6 gram packet Tofu Hero Italian Herb Medley 1 o oz pkg linguine -- broken into thirds 1 1/2 cups sliced baby-cut carrots -- lightly steamed 1 cup frozen peas -- cooked 1/3 cup thinly sliced green onions 1/3 cup chopped red bell pepper 1 tablespoon dried basil Place the tofu in food processor and blend until smooth. Add the garlic, mayonnaise, soymilk, vinegar, and Tofu Hero and process. Cook linguine according to package directions and set aside under cold running water. Drain and mix thoroughly with the tofu mixture in a large bowl. Stir in carrots, peas, scallions, and bell pepper. Sprinkle generously with basil, cover, and refrigeraate.
