Mincemeat Loaf (ABM)

FOR A TEN-CUP (minimum) PAN:

3/4 cup water

1/2 cup mincemeat

1 tablespoon margarine or butter

3 cups bread flour

1/3 cup oatmeal

1 tablespoon brown sugar

3/4 teaspoon salt

1/4 teaspoon ground cinnamon -- see tip

1 1/4 teaspoons active dry yeast -- or

bread machine yeast

 

Add ingredients to the machine in the recommended order (see your machine's

manual). Select the basic white bread cycle.

 

TIP - If you rescale the recipe for a 2-pound loaf, do not increase the

cinnamon.

Traditionally used as a filling for pies, tarts, and cookies, mincemeat jazzes

up this spiced oat bread. DID YOU KNOW? Despite it's name, mincemeat is most

often meat-free. But this wasn't always true. Originally, beef suet and ground

meat were part of the recipe, devised as a way to preserve meat. Now the

combination of ingredients is usually chopped apples, raisins, spices and

sometimes rum or brandy.
