Marie: You might want to try one of these. I included recipes for vegan

ricotta " cheese " too since that can be used interchangably with cottage cheese

but has a creamier texture. Recipes I'm sending are:

crumbled

Mash all the ingredients together until the mixture has a fine, grainy

texture like ricotta cheese.

1 teaspoon salt

4 tablespoons oil

2 teaspoons basil

Grind tofu through a food mill or mash with fork. Mix in other ingredients. Use

in recipes that call for a Ricotta style filling.
