The red of the cranberries and if decorated with non-toxic plant leaves, the green of the platter make it super festive. It is also delicious. My sister-in-law brought it a few years ago and I have repeated it since. Low-fat: not a chance. Tis the season... -Susan * Exported from MasterCook * Holiday Brie Recipe By : Cindy Conway Serving Size : 1 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup fresh cranberries -- chopped 1/2 cup pear -- chopped, peeled 1 tablespoon raisins 2 tablespoons honey 1/4 teaspoon pumpkin pie spice 3 tablespoons cranberry juice 2 tablespoons red wine vinegar 2 teaspoons lemon juice 1 15 oz. brie wheel 1. Combine 1st 8 ingrediants in a heavy saucepan. 2. Bring mixture to a boil over med. high heat. 3. Cover reduce heat and simmer 30 minutes, stirring frequently. 4. Cool mixture to room temperature. 5. Cut circle in top rind of cheese leaving a 1/4 inch border of rind. 6. Remove center of rind from cheese leaving border intact. 7. Place brie on an overproof serving platter, spread cranberry mixture over top. 8. Bake 350 for 12-15 minutes or until cheese is bubbly. 9.
