Sweet-And-Sour Red Cabbage w/Apples & Cider Vinegar

2 tablespoons olive oil

1 red onion -- diced

1 head red cabbage -- cored & julienned

(discard outer leaves)

1 jalapeno chile pepper -- seeded & julienned

1 red bell pepper -- seeded & julienned

1/2 teaspoon ground cumin

1 teaspoon ground coriander

1 cup cider vinegar

1/2 cup light brown sugar -- LOOSELY packed

2 green apples -- peeled, cored, diced

(Granny Smith or Pippin)

3 tablespoons chopped fresh cilantro

1 tablespoon chopped fresh oregano

salt -- to taste

 

In a large saucepan, heat the olive oil over high heat until lightly

smoking. Add the onion, cabbage, jalapeno, red pepper, cumin, and coriander

and saute for 5 minutes, or until the vegetables begin to release their

juices. Add 1/2 cup water and the vinegar bring to a boil, and reduce the

liquid for 5 minutes, or until almost dry. Add the sugar and stir until

dissolved. Reduce the heat to medium-low and let simmer for 10 minutes. Add

the apples, cilantro, and oregano and cook for 4 minutes longer or until

the apples are just tender. Season with salt and serve.
