Add 1/2 cup water and the vinegar bring to a boil, and reduce the liquid for 5 minutes, or until almost dry. Add the sugar and stir until dissolved. Reduce the heat to medium-low and let simmer for 10 minutes. Add the apples, cilantro, and oregano and cook for 4 minutes longer or until the apples are just tender. Season with salt and serve.
