Guest guest Posted December 10, 2000 Report Share Posted December 10, 2000 * Exported from MasterCook * Grilled Winter Squash Recipe By : www.wholefoods.com/magazine Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium winter squash (butternut or kabocha etc.) 2 tablespoons maple syrup 2 teaspoons soy sauce Serves 4 1.Peel the squash if desired, then cut it in half and remove the seeds. 2.Slice the squash into 1/2-inch thick strips and steam over boiling water until just tender when pierced with a sharp knife. 3.Mix the maple syrup and soy sauce in a small bowl. Brush or spray the grill with vegetable oil and arrange the cooked squash slices on it. 4.Baste with the maple syrup mixture. 5.Grill over medium-hot coals, turning and basting frequently, until the outsides are pleasantly browned, about 10 minutes. Per serving: 72 calories (0% from fat), 1 g. protein; 17 g. carbohydrate; 0 g. fat; 92 mg. sodium; 0 mg cholesterol.
