Select one acorn squash for every two people. I always like to make a few extra, for people who want seconds or for leftovers the next day. 1. Preheat the oven to 400 F. 2. Cut acorn squash in half, either across the midsection or lengthwise. Scoop out the seeds and stringy parts. Brush the cut surfaces with melted butter and sprinkle with salt. 3. Arrange the squash in a baking pan, cut side down, and film the bottom of the pan with 1/4-inch of water. Bake for 30 minutes. 4. Turn the squash over, brush insides with melted butter, and sprinkle with brown sugar.
