Hard-skinned winter squashes can be the very devil to cut into manageable

pieces and peel. I've heard stories of cooks going at them with ice picks

or hurling them fall force onto stone floors to make the initial

break. Among the easiest to peel is a butternut squash. Cut it in half,

crosswise where the neck meets the bulb. Use a sharp paring knife to peel

the neck. Scoop out the seeds and pulp in the bulb, cut in half or in

quarters, and peel with a paring knife. Cube or slice the flesh as desired.

 

For larger squashes, you may want to use a cleaver and a rubber

mallet. Pound the cleaver into the squash with the mallet until you can

cut away a chunk of it. Cut away the hard peel with a sharp knife. Don't

worry about cutting away some of the flesh. There is usually plenty left.
