I've heard stories of cooks going at them with ice picks or hurling them fall force onto stone floors to make the initial break. Among the easiest to peel is a butternut squash. Cut it in half, crosswise where the neck meets the bulb. Use a sharp paring knife to peel the neck. Scoop out the seeds and pulp in the bulb, cut in half or in quarters, and peel with a paring knife. Cube or slice the flesh as desired. For larger squashes, you may want to use a cleaver and a rubber mallet. Pound the cleaver into the squash with the mallet until you can cut away a chunk of it. Cut away the hard peel with a sharp knife. Don't worry about cutting away some of the flesh.
