Guest guest Posted December 9, 2000 Report Share Posted December 9, 2000 * Exported from MasterCook II * Garbure-French Vegetable Stew Recipe By : 366 Delicious Ways to Cook Pasta w/Vegetables Serving Size : 6 Preparation Time :0:00 Categories : French Pasta Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 large yellow onion -- chopped 2 cloves garlic -- minced several leaves of fresh sage, chopped OR 1/2 tsp dried 4 cups vegetable broth 1 large carrot -- sliced 2 purple top-turnips, peeled & sliced 16 ounces can tomatoes with juice 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon fennel seed 1/4 teaspoon dried thyme 1/2 pound fresh green beans -- cut into 2 " lengths 2 cups shredded cabbage 15 ounces can white cannelini beans -- drained & rinsed 4 ounces orecchiette Heat the oil in a large pot, and slowly saute the onion and garlic with the sage until they are soft and fragrant but not brown, 5 minutes. Add the stock, carrot, turnips, tomatoes, seasonings and herbs. bring to a simmer and cook, covered, for 15 minutes, stirring occasionally. Add the green beans and the cabbage, and continue simmering for 8 minutes. Add the cannellini beans and cook another 5 minutes, until everything is quite tender. Meanwhile, cook the orecchiette according to package directions and drain. Stir the pasta into the vegetables. Serve the stew in bowls with French bread on the side. Per serv: 258 cal, 5 g fat, 0 mg chol, 640 mg sod - - - - - - - - - - - - - - - - - - NOTES : Replacing the sausage traditional to this dish, I've used some robust sausage flavors - garlic, sage, fennel, and pepper.
