Zucchini Soup with Angel Hair

1 tablespoon olive oil

1/4 cup chopped shallots or onions

6 cups vegetable broth

1/2 cup tomato puree (not tomato paste)

1 large carrot -- sliced diagonally

1/4 cup fresh celery leaves or 1 Tbsp dried

pinch dried basil

pinch dried thyme

1 medium zucchini (1/2-3/4 lb) -- cut into 1/2 " pieces

2 cups coarsely chopped greens, such as

escarole, kale, or outer leaves of Romaine

salt and pepper

4 ounces angel hair pasta

 

Heat the oil in a large pot and saute the shallots or onions and

carrots until soft and fragrant. Add the stock, tomato pureee, celery

leaves, basil, and thyme. Bring to a boil, reduce the heat, and

simmer 5 minutes. Add the zucchini and greens and continue simmering,

covered, until the zucchini is tender, 8 to 10 minutes. Taste to

correct the seasonings. Add salt and pepper to your taste.

 

Cook the angel hair separately according to package directions, but

for the minimum amount of time. Drain and stir the pasta into the

soup. Serve as soon as possible after adding the pasta.
