Guest guest Posted December 9, 2000 Report Share Posted December 9, 2000 Spinach & Chickpeas w/Elbows Recipe By : 366 Delicious Ways to Cook Pasta w/Vegetables Serving Size : 4 Preparation Time :0:00 Categories : Beans Greens Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces package fresh spinach 2 tablespoons olive oil 1 large yellow onion -- chopped 10 leaves fresh sage -- chopped 15 ounces can chickpeas -- drained & rinsed 1/4 teaspoon salt several grindings of black pepper 8 ounces elbows Wash the spinach well and steam it in just the water that clings to the leaves until wilted. Drain, reserving 1/2 cup of the pan liquid. In a large skillet, heat the oil and slowly fry the onion until translucent. Stir in the sage and continue to cook for 3 minutes. Add the chickpeas and cook 5 minutes longer. Add the spinach, salt, pepper, and heat through. Meanwhile, cook the elbows according to package directions. Drain and spoon the pasta into a large serving dish.
