Guest guest Posted December 9, 2000 Report Share Posted December 9, 2000 * Exported from MasterCook II * Asian Spinach Salad w/Walnuts & Noodles Recipe By : 366 Delicious Ways to Cook Pasta w/Vegetables Serving Size : 4 Preparation Time :0:00 Categories : Asian Pasta Salads Greens Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons walnut oil 3 tablespoons seasoned rice vinegar 1 tablespoon naturally brewed soy sauce 1/4 teaspoon ground ginger 4 ounces Asian noodles or thin linguine 6 ounces fresh young spinach, washed, spun dry -- stems removed 4 scallion -- chopped 5 radishes -- sliced 1/2 cup walnut halves or pieces Combine the oil, vinegar, soy sauce and ginger in a salad bowl. Cook the noodles according to package directions. Drain and rinse until they are cool. Toss them with the dressing. Tear the spinach into bite-size pieces. Add the spinach, scallions, radishes, and walnuts to the noodles. Toss again. Taste to correct the seasonings, adding more vinegar or soy sauce if desired.
