Stir-Fried Snow Peas & Bean Sprouts w/Asian Noodles

1/2 cup vegetable broth

1 teaspoon cornstarch

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon sugar

1/2 teaspoon salt

1 tablespoon vegetable oil

1 1/2 cups fresh snow peas -- ends trimmed

1 red bell pepper -- cut into strips

4 scallion -- cut into 2 " lengths

1/2 pound fresh bean sprouts

8 ounces dried thin Asian noodles or vermicelli

1/2 cup cashews or peanuts -- optional

 

Whisk together the stock, cornstarch, soy sauce, sesame oil, sugar,

and salt.

 

Heat the oil in a large wok or skillet and add the snow peas, bell

pepper, and scallions; stir-fry for 2 minutes. Add the bean sprouts

and stir-fry 1 to 2 minutes longer. Pour in the stock mixture and

stir until the vegetables are coated with the thickened sauce.

Continue cooking over very low heat for 2 to 3 minutes.

 

Meanwhile cook the noodles according to package directions and

drain. Spoon them into a large serving dish and toss with the

vegetables. If you wish, sprinkle with cashews or peanuts.
