Creamed Spinach w/Cavatelli

10 ounces fresh spinach, well washed, stems removed

1/2 cup vegetable stock

3 tablespoons butter

1/4 cup chopped shallots

3 tablespoons superfine flour such as Wondra

1 1/2 cups heated milk

1/2 teaspoon salt

1/8 teaspoon freshly ground black pepper

2 dashes cayenne

2 dashes nutmeg

6 ounces cavatelli

 

In a large pot, steam the spinach in the stock until it has wilted, 3

minutes. Remove the spinach from the heat and drain it, reserving 1/2

cup of the liquid.

 

Heat the butter in a saucepan and slowly saute the shallots until

they are golden. Add the flour and cook over low heat for 3 minutes,

stirring often. Add the hot milk all at once and cook over medium-

high heat, stirring constantly, until the sauce is bubbling and

thickened. Whisk in the reserved spinach liquid, salt, black pepper,

cayenne, and nutmeg and cook over very low heat, stirring often for 5

minutes.

 

Meanwhile, cook the cavatelli according to package directions and

drain. Combine the spinach, cavatelli and sauce in a large serving

dish.
