Curried Peas & Mushrooms w/Orzo

2 tablespoons vegetable oil

1 large yellow onion -- sliced

1 slice fresh ginger root -- peeled & minced

10 ounces button mushrooms -- halved

2 cups peeled chopped fresh or canned tomatoes

1 1/2 cups fresh shelled peas OR 10 oz pkg frozen --

thawed to separate

1 teaspoon curry powder

1/8 teaspoon cayenne

1 pinch ground cinnamon

1/2 pound orzo

 

Heat the oil in a large skillet and saute the onion and ginger for 3

minutes. Add the mushrooms and continue to saute until the mushrooms

are beginning to brown. Add the tomatoes, peas, curry, cayenne, and

cinnamon. Braise over low heat until the peas are tender, 5 to 7

minutes. Taste to correct the seasonings; you may want more curry or

cayenne.

 

Meanwhile, cook the orzo according to package directions and drain.

Spoon into a large serving dish. Toss with half the vegetable

mixture. Top with the remaining vegetables and toss.
