Szechuan Stir-Fried Leeks w/Asian Noodles

1 bunch leeks (3 to 4)

2 tablespoons vegetable oil

1 red bell pepper, seeded -- cut into strips

4 ounces fresh mushrooms -- cleaned & sliced

1 clove garlic -- finely chopped

3 slices fresh ginger root, peeled -- finely chopped

1 teaspoon hot red pepper flakes -- to taste

1 teaspoon cornstarch

1/2 cup vegetable broth

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon sugar

1/2 pound Asian thin flat noodles or thin linguine

 

Trim off and discard the tough green part of the leeks. Cut the leeks

in half lengthwise. Soak and rinse well under cold running water to

remove all grit. Cut them into quarters lengthwise and into 1/2 "

slices crosswise. Shake them dry in a towel.

 

Heat the oil in a large wok or skillet and stir-fry the leeks, bell

pepper, mushrooms, garlic, ginger, and hot pepper flakes for 2

minutes. Blend the cornstarch into the stock. Add the stock mixture,

vinegar, sesame oil, and sugar, and cook, stirring constantly, until

the vegetables are just tender, 2 to 3 minutes.
