Add the tomatoes, cilantro, coriander, and salt and simmer for 5 minutes. Add the black beans and simmer for 5 minutes. Meanwhile, cook the shells according to package directions and drain. In a large serving dish, toss the shells with the bean mixture. Spread the cheese on top.
