Spicy Black Beans & Chiles w/Shells

Amount Measure Ingredient -- Preparation Method

2 tablespoons vegetable oil

1 large yellow onion -- chopped

1 large red bell pepper -- seeded & diced

1 large Anaheim chili pepper -- seeded & diced

1 jalapeno -- seeded & minced

16 ounces can tomatoes with juice -- chopped

1/2 teaspoon dried cilantro

1/2 teaspoon ground coriander

1/2 teaspoon salt

16 ounces can black beans -- drained & rinsed

6 ounces medium shells

1 cup coarsely grated Monterey Jack cheese

 

Heat the oil in a large skillet and slowly saute the onion, bell

pepper, and chiles until they are soft and tender, 5 to 6 minutes.

Add the tomatoes, cilantro, coriander, and salt and simmer for 5

minutes. Add the black beans and simmer for 5 minutes.

 

Meanwhile, cook the shells according to package directions and drain.

In a large serving dish, toss the shells with the bean mixture.

Spread the cheese on top.
