Chickpeas with " Straw and Hay "

Amount Measure Ingredient -- Preparation Method

20 ounces can chickpeas -- drained & rinsed

1/2 cup vegetable stock

2 tablespoons olive oil

1 clove garlic -- crushed

1 tablespoon chopped fresh rosermary and thyme

(combined) or 1/4 tsp each dried herbs

salt and freshly ground black pepper

12 ounces spinach and plain fettuccine

grated Romano cheese

 

Slowly simmer the chickpeas with the stock, oil, garlic, and herbs

about 10 minutes. There should be at least 1/4 cup broth remaining,

if not, add a little more. Remove the garlic. Add salt and pepper to

your taste.

 

Meanwhile cook the fettuccine according to package directions and

drain. On a large serving platter, toss the fettuccine with the

chickpeas and pan liquid. Pass the cheese at the table.

NOTES : Paglia e fieno or " straw and hay " is the Italian name for a

combination of spinach and plain fettuccine. They are sometimes

packaged together under the name fettuccine florentine. Or you can

make your own assortment from a package of each.
