Guest guest Posted December 8, 2000 Report Share Posted December 8, 2000 * Exported from MasterCook II * Chickpeas with " Straw and Hay " Recipe By : 366 Delicious Ways to Cook Pasta w/Vegetables Serving Size : 4 Preparation Time :0:00 Categories : Beans Italian Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 20 ounces can chickpeas -- drained & rinsed 1/2 cup vegetable stock 2 tablespoons olive oil 1 clove garlic -- crushed 1 tablespoon chopped fresh rosermary and thyme (combined) or 1/4 tsp each dried herbs salt and freshly ground black pepper 12 ounces spinach and plain fettuccine grated Romano cheese Slowly simmer the chickpeas with the stock, oil, garlic, and herbs about 10 minutes. There should be at least 1/4 cup broth remaining, if not, add a little more. Remove the garlic. Add salt and pepper to your taste. Meanwhile cook the fettuccine according to package directions and drain. On a large serving platter, toss the fettuccine with the chickpeas and pan liquid. Pass the cheese at the table.
