Green Beans & Walnuts with Spaghettini

1 cup shelled walnut halves or pieces

2 tablespoons olive oil

1 clove garlic -- minced

3/4 pound fresh Romano beans (a broad, flat

green bean) OR 1 10-oz pkg of frozen

Italian green beans, thawed just enough

to separate

1/2 cup vegetable broth

1/2 teaspoon dried basil

1/4 teaspoon salt

freshly ground black pepper

1/2 pound spaghettini

3 tablespoons grated Parmesan cheese -- plus extra for table

 

Put the walnuts into a small saucepan with water to cover. Bring to a

boil, remove from the heat, and drain well.

 

Heat the oil in a large skillet and saute the garlic until it's

fragrant. Add the walnuts and continue sauteing for 1 to 2 minutes,

without browning the garlic. Add the green beans and broth, cover,

and cook on low until the beans are tender, about 10 minutes for

fresh beans, 5 minutes for frozen. Season with basil, salt and pepper

to your taste.

 

Meanwhile, cook the spaghettini according to package directions.

Drain and toss in the skillet with the bean mixture and the 3 Tbsp

cheese. Spoon into a serving dish. Pass more cheese at the table.
