Instant Alfredo Sauce

Amount Measure Ingredient -- Preparation Method

1/2 pound crumbled firm regular tofu -- steamed 5 minutes and

cooled

3 tablespoons nutritional yeast flakes

2 tablespoons tahini

2 tablespoons fresh lemon juice

1 1/2 tablespoons sweet white miso

1 teaspoon onion powder

3/4 teaspoon salt

1/2 teaspoon paprika

1/4 teaspoon garlic powder

1/4 teaspoon dry mustard

1/2 to 1 cup water, more or less as needed

 

Place all the ingredients, except the water, in a food processor fitted with a

metal blade, and process until very smooth. Stop the processor occaisionally to

stir the mixture, and scrape down the sides of the container. Blend in the

water, adding a small amount at a time to make a thick but pourable sauce.

 

Tip: For Warm Alfredo Sauce, do not cool the tofu and use boiling water.

 

Description:

" No one will believe this sauce is low in fat and dairy-free. Toss

with fettucine and wait for the accolades to begin. "
