Guest guest Posted December 7, 2000 Report Share Posted December 7, 2000 * Exported from MasterCook * Tomato and Mozzarella Salad (Insalata Caprese) Recipe By :Rombauer's New Joy of Cooking Serving Size : 6 Preparation Time :0:00 Categories : Salads VegJoy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 large ripe tomatoes -- 1/2-in slices 12 ounces mozzarella cheese -- 1/4-in slices 1 1/2 cups fresh basil leaves 1/2 cup extra virgin olive oil salt to taste Arrange tomatoes and cheese, alternating slices, on a platter. Sprinkle with basil. Drizzle with olive oil. Sprinkle with salt. Serve at once or let stand at room temperature for up to 1 hour before serving. In either case, do not refrigerate the salad.
