Pita Salad (Fattoush)

Amount Measure Ingredient -- Preparation Method

1 small cucumber -- peeled and seeded

and cut into 1/2-inch cubes

1 teaspoon salt

2 seven-inch pita breads -- split

or sliced open

3 medium ripe tomatoes -- chopped

1 small green bell pepper (optional) -- diced

6 scallions (with tender greens) -- finely chopped

1/3 cup chopped fresh parsley

2 tablespoons chopped fresh cilantro

1 tablespoon finely chopped fresh mint

1/3 cup extra virgin olive oil

1 lemon -- juiced 1/4 cup per lemon

1 clove garlic -- crushed

1/4 teaspoon salt

 

Toss cucumber and salt together in a colander. Let stand to drain for 30

minutes.

 

Preheat the oven to 350F. Heat pita until crisp and lightly browned, about 10

minutes. Break into bite-sized pieces.

 

Press the excess water out of the cucumbers, rinse quickly, and blot dry.

Combine the cucumbers in a medium bowl with the tomatoes, bell peppers,

scallions, parsley, cilantro and mint.

 

In a small bowl, whisk together the olive oil. lemon juice, garlic and salt.

Pour the dressing over the vegetables and toss well. Add the pita toasts, toss

again, and serve immediately.
