Place a small heavy skillet over medium heat. Place 4 tablespoons of cumin seeds in the skillet and cook, stirring, for about 3 minutes, until the seeds start to turn color and emit a delicious, roasted aroma. 2. Remove the seeds to a dish or paper towel and let them cool slightly. Place them in the container of a spice grinder (a clean coffee grinder will do) and grind them to a powder.
