Guest guest Posted December 7, 2000 Report Share Posted December 7, 2000 * Exported from MasterCook * Light Vegetable Stock Recipe By : One Dish Vegetarian by Maria Robbins, page 156 Serving Size : 1 Preparation Time :0:00 Categories : Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 cups water 1 cup chopped fresh spinach 2 unpeeled onions -- quartered 1 leek -- trimmed rinsed and sliced 3 carrots scrubbed but not peeled -- coarsely chopped 3 parsnips scrubbed but not peeled -- coarsely chopped 3 small inner celery ribs including leaves -- coarsely chopped 1 bunch fresh parsley including stems -- coarsely chopped 2 bay leaves 4 garlic cloves smashed with a knife 6 whole coriander seeds 6 whole black peppercorns 1 small dried hot chili pepper -- (optional) 2 quarts Combine all the ingredients in a soup pot and bring to a boil. Immediately reduce heat to a simmer and simmer over low heat for 40 minutes. Strain the broth and discard all the vegetables.
