Lemon-Basil Dressing

1/2 cup crumbled silken tofu

2 tablespoons fresh lemon juice

2 tablespoons extra-virgin olive oil

1 tablespoon chopped onions

1 tablespoon fruit-sweetened apricot jam

pinch salt

pinch pepper

6 large fresh basil leaves -- sliced into strips

 

Combine all the ingredients, except the basil leaves, in a blender or food

processor fitted with a metal blade, and process until creamy. Stir in the

basil leaves.

 

Description:

" Lightly sweet and sharp, fresh basil is the secret ingredient. "
