Guest guest Posted December 7, 2000 Report Share Posted December 7, 2000 * Exported from MasterCook II * Three Bean Salad with Mustard Dressing Recipe By : Prevention's Cooking for Good Health Serving Size : 8 Preparation Time :0:10 Categories : Beans Lowfat Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SALAD 2 cups halved young green beans 1 cup cooked chickpeas 1 cup cooked kidney beans 1 large tomato -- seeded & diced MUSTARD DRESSING 2 tablespoons olive oil 2 tablespoons Dijon mustard 2 tablespoons water 1 tablespoon chopped fresh basil or 1 1/2 tsp dried 1 teaspoon honey 1/4 teaspoon ground black pepper 1/4 cup snipped chives 1. To make the salad: Steam the green beans until crisp-tender, about 5 minutes. Place in a large bowl. Add the chick-peas, kidney beans, and tomatoes. Mix well. 2. To make the mustard dressing: In a blender, combine the oil, mustard, water, basil, honey and pepper. Process on medium speed for 1 minute. Pour over the salad. Sprinkle with the chives. Toss well.
