Guest guest Posted December 7, 2000 Report Share Posted December 7, 2000 * Exported from MasterCook II * Clear Spinach & Tomato Soup Recipe By : Prevention's Cooking for Good Health Serving Size : 6 Preparation Time :0:20 Categories : Italian Lowfat Pasta Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- diced 2 teaspoons minced garlic 1 tablespoon olive oil 4 cups vegetable stock 1/2 cup orzo or other tiny pasta 1 pound spinach, chopped into bite-size pieces 3 tomatoes, peeled, seeded & diced 1 tablespoon minced fresh basil or 1 1/2 tsp dried 1/2 teaspoon ground black pepper grated parmesan cheese -- optional 1. In a 3-quart saucepan over medium heat, saute the onions and garlic in the oil for 3 minutes, or until the onions look translucent. 2. Add the stock and bring to a boil. Reduce the heat to medium low, add the pasta and simmer for 10 minutes. 3. Stir in the spinach and tomatoes. Simmer for 5 minutes. Stir in the basil and pepper. Serve sprinkled with the Parmesan. Per serv: 116 cal, 3.8 g fat (29% of cal), 0 mg chol, 119 mg sod - - - - - - - - - - - - - - - - - - NOTES : This delicious Mediterranean soup is cholesterol free and has only 116 calories per serving.
