Clear Spinach & Tomato Soup

Amount Measure Ingredient -- Preparation Method

1 onion -- diced

2 teaspoons minced garlic

1 tablespoon olive oil

4 cups vegetable stock

1/2 cup orzo or other tiny pasta

1 pound spinach, chopped into bite-size pieces

3 tomatoes, peeled, seeded & diced

1 tablespoon minced fresh basil or 1 1/2 tsp dried

1/2 teaspoon ground black pepper

grated parmesan cheese -- optional

 

1. In a 3-quart saucepan over medium heat, saute the onions and

garlic in the oil for 3 minutes, or until the onions look translucent.

 

2. Add the stock and bring to a boil. Reduce the heat to medium low,

add the pasta and simmer for 10 minutes.

 

3. Stir in the spinach and tomatoes. Simmer for 5 minutes. Stir in

the basil and pepper. Serve sprinkled with the Parmesan.

NOTES : This delicious Mediterranean soup is cholesterol free and has

only 116 calories per serving. Yet it's nice and filling, thanks to

the pasta in it. The spinach and tomatoes contribute lots of immunity-

building vitamin C.
