Guest guest Posted December 6, 2000 Report Share Posted December 6, 2000 This sounds a little different: * Exported from MasterCook * Szechuan-Style " Hacked " Tempeh Recipe By :Joy of Cooking All About Vegetarian Cooking Serving Size : 4 Preparation Time :0:00 Categories : Joy of Cooking--Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces tempeh -- cut into 1/2 " cubes 4 tablespoons soy sauce -- (light or dark) divided 2 teaspoons minced fresh ginger -- (to 3 tsp) 1 teaspoon minced garlic 1/2 teaspoon Szechuan peppercorns -- cracked 1 tablespoon vegetable oil 2 cups sliced, seeded & peeled cucumbers 1/2 cup chopped red bell pepper 1/4 cup sliced scallions 1/4 cup smooth peanut butter 2 tablespoons rice vinegar 1 tablespoon dry sherry 3 teaspoons toasted sesame oil -- (to 4) 1 teaspoon chile paste FOR GARNISH: 1/2 cup chopped red bell pepper 1/4 cup sliced scallions 1/4 cup chopped salted peanuts SERVE WITH: chilled cooked rice noodles Combine tempeh, 2 tablespoons soy sauce, ginger, garlic, and peppercorns, and let stand for 15 to 30 minutes. Heat vegetable oil in a wok or medium skillet. Add the tempeh mixture and cook, stirring, until browned. Let cool, then refrigerate until chilled. Combine cucumbers, red bell pepper, and scallions and arrange on a serving platter. Spoon the tempeh mixture over the vegetables. Combine peanut butter, 2 tablespoons soy sauce, rice vinegar, sherry, sesame oil, and chile paste, and stir together until smooth. Drizzle over tempeh mixture. Garnish with red bell pepper, scallions, and peanuts. If desired, serve with rice noodles.
