Brown Rice and Tofu Salad with Orange Sesame Dressing

DRESSING:

1/2 cup canola oil

4 teaspoons toasted sesame oil

1/3 cup orange juice

1/3 cup seasoned rice vinegar

1 small fresh jalapeno pepper -- seeded and minced

1 teaspoon minced peeled fresh ginger

1 teaspoon minced garlic

SALAD:

4 cups warm cooked brown basmati rice

10 1/2 ounces extra-firm tofu -- pressed if desired

and cut into 3/4-inch cubes

1 1/2 cups cooked adzuki beans -- rinsed and drained

(dried beans triple in volume when cooked)

1/2 cup chopped red onions

1 cup chopped bell peppers (red and green)

1/4 cup finely chopped fresh cilantro

salt and black pepper -- to taste

lettuce leaves

1 tablespoon sesame seeds -- toasted

 

Dressing: combine ingredients in a jar: shake well. Chill.

 

In a large bowl, combine rice, tofu, beans, onions, bell peppers and cilantro.

 

Shake the dressing well, pour over the rice mixture, and toss well to coat.

Season with salt and ground black pepper to taste.

 

Line a serving platter with lettuce leaves. Spoon the salad on the leaves and

sprinkle with toasted sesame seeds.
