Whipped Feta with Roasted Peppers

Amount Measure Ingredient -- Preparation Method

1 pound Greek feta cheese -- crumbled

5 tablespoons extra-virgin olive oil -- divided

1 red bell pepper -- roasted, peeled, seeded, & coarsely

chopped

2 fresh jalapeno peppers -- (to 3) seeded & minced

2 pickled pepperoncini -- rinsed, seeded & minced

freshly ground black pepper

2 tablespoons fresh lemon juice

crackers or pita bread

 

Combine feta cheese and 2 tablespoons of olive oil in food processor. Pulse

until the feta is creamy. Add bell pepper, jalapenos, pepperoncini, and several

grindings of black pepper. Pulse until mixture is well combined while gradually

adding 3 tablespoons of olive oil and lemon juice. The feta should be creamy

and spreadable. Taste and add more olive oil and/or lemon juice if desired.

Serve with crackers and/or pita bread.
