Tangy White Bean Sauce

1 cup cooked white beans (such as great Northern

beans, baby limas, cannellini, navy beans) -- rinsed and

drained

1 tablespoon fresh lemon juice

1 tablespoon extra-virgin olive oil

1 teaspoon Dijon mustard

1 teaspoon dried tarragon

1/2 teaspoon crushed garlic

1/4 teaspoon salt

ground white or black pepper

2 tablespoons water, more or less as needed

 

Combine all the ingredients iin a blender, using just enough water to achieve a

thick but pourable consistency. Process until smooth and creamy.
